The secret recipe

So the truth is that I gave the post that heading because there really isn't any secret to this recipe. And, I have to confess, because I thought it might get you to open the post.

The recipe I am sharing today is for one of our most popular beverages (my personal favorite), that also happens to be one of the healthiest drinks you're likely to find in Cuenca. It has been one of my go to flavor combinations for years in many different forms. Sorbet, cocktails, etc. This form is an agua fresca.

I'm speaking, of course, of the pineapple-basil agua fresca. As I said before, not only is this a spectacular flavor combination, it's also good for you as it has absolutely no added sugar. It has precisely 3 ingredients. Pineapple, basil and water. That's it. So how do you make it?

Chunk up a nice, ripe pineapple and throw it in a blender. Add maybe 10-15 basil leaves, depending on the size of the pineapple and the size of the leaves. Experiment. Too basily? Less leaves. Not basily enough? You get the idea. Then cover with water, blend and strain. Again, more or less water as you like.
