Lamb burger recipe

I love lamb. It is arguably my favorite meat and much healthier for you than beef or pork. I have been making lamb burgers for my restaurants and my family for years. Because lamb doesn't have nearly the fat beef has, lamb burgers need to be doctored to some degree to make them sublime. Here's how we do it at EAT (you can get ground lamb from Lenny Charnoff of Loaves and Fishes in Cuenca).

1 lb. ground lamb leg
1 small white onion small dice
2 small ribs celery small dice
1 t chopped garlic
2 bay leaves (laurel)
1/4 c feta (queso amasado from the market is a fine substitute)
2 T chopped parsley
1 T Worcestershire sauce or Salsa Ingles

Cook the onions, celery and bay leaves in a little oil until the onion is transparent. Add the garlic and cook for another minute or two. Remove from heat and cool. When cool, add to the ground lamb, along with all the other ingredients. Form into patties and cook until pink inside (or whatever your preference is).
