Cooking Fanesca in Cuenca: Fanesca is a must, if you’re visiting Ecuador during Easter week. To help you get in touch with local culture, we’ve created a special cooking experience to teach you how to prepare this very traditional soup, guided every step of the way by a professional chef in Cuenca.

Fanesca is a rich soup made from pumpkin (zapallo), squash, and different kinds of beans and grains including habas, peas, white beans and corn. The recipe also includes bacalao (salted cod). Depending on whose recipe you follow, this Ecuadorian soup is often topped with avocado, empanadas, fried plantain or even boiled eggs. Unlike most traditional Ecuadorian menus, this meal doesn’t contain any red meat, due to the prohibition of red meat during Holy Week.

After learning to cook the fanesca you’ll get to put your feet up and enjoy your fanesca. Be warned: you won’t need any dinner. Fanesca is famously filling.

This cooking course in Cuenca will begin early as it takes a long while to prepare fanesca. We recommend comfortable shoes, and have a good breakfast, as you’ll get hungry otherwise before the meal is ready. If you have any particular dietary requirements, please let us know when booking to tour.
